Gray Pizza Crust

Tonight I was patching together dinner using stuff I already had on hand. I wanted zucchini crusted pizza but didn't have enough zucchini. I had plenty of eggplant and thought it should be a reasonable substitute for some of the zucchini. Here are the results:





The color of the crust was the biggest problem. I'm not sure the picture properly captures the greyness that was apparent in real life. The crust didn't really didn't taste terrible, but I found myself trying not to look at it. My boyfriend described it as "creepy", but ate three pieces. He's a trooper.
